Ever since I realized how easy it is to make your own healthy granola and how delicious it is, I never reach for the store-bought, sugar-filled granola anymore. Living in a country where there aren’t as many healthy food options around as other people around the globe might have, I often find myself Googling stuff like “Healthy homemade recipe for… (fill the blank)”. I used to think that not having so many options around was a bad thing but over time I realized that it is a good opportunity to learn how to cook foods I like myself and this way I know exactly what is in it and what I am putting inside my body.
Over time I experimented with many healthy granola recipes. Below I am sharing with you one of my favorites.The best part is, you can modify it however you like or use whatever ingredients you currently have lying around the pantry.
HEALTHY GRANOLA RECIPE
Prep time – 5 minutes
Cook time – 10 minutes
2 cups of oats
1 cup of nuts, chopped ( I used almonds and walnuts)
1/4 cup seeds (I used sunflower and pumpkin)
1/4 cup of dried fruits (I used cranberries)
2 tbsp honey or maple syrup
2 tbsp coconut oil
1tsp vanilla or another extract
pinch of salt
Preheat your oven to 150º C. Line a medium/large tray* with baking paper.Combine all of the dry ingredients(oats, nuts, seeds, dried fruits, salt) in a large bowl. Melt the coconut oil** and combine it with the honey or maple syrup and the vanilla extract. Pour the wet ingredients into the bowl of dry ingredients and mix well. Spread the mixture in a thin layer onto the baking paper and bake around 10 minutes. Let the granola cool before transferring to a jar.
*Try using a larger tray because the granola mixture needs to be spread in one layer.
** Depending on your room temperature the coconut oil may already be melted because it has a low melting point (about 24º C).
